Cardamom-Cashew Chews

Bars

1/2 cup powdered sugar
1/2 cup coarsely chopped cashews, PLUS
1/3 cup coarsely chopped cashews, divided
1/2 cup unsalted butter, cut up
2 egg yolks
1 teaspoon vanilla extract
1 1/4 cup all-purpose flour
1 1/2 teaspoon ground cardamom
1 dash salt

Topping

2 tablespoons powdered sugar
1/8 teaspoon ground cardamom

Heat oven to 350F. Line bottom and sides of 8-inch square pan with
foil. Cut 8-inch square piece of parchment paper; place over foil in
bottom of pan.

Bars: Place powdered sugar and first measure of the cashews in food
processor.* Pulse until finely chopped. Add butter; pulse to blend. Add
egg yolks, vanilla, flour, cardamom and salt. Pulse until well-blended.
Firmly pat dough into pan. Sprinkle remaining cashews over dough; press
into dough.

Bake 12 to 15 minutes or until light brown at edges. Place cookies on
wire racks; cool completely.

Topping: In small bowl, stir together powdered sugar and cardamom. Lift
foil to remove bars from pan; cut into pieces. Using fine sieve,
sprinkle bars with powdered sugar mixture.

TIP *Cashews can be chopped by hand and dough can be made using a
mixer.

PER BAR: 70 calories, 4.5 g total fat (2 g saturated fat), 1 g protein,
6.5 g carbohydrate, 20 mg cholesterol, 10 mg sodium, .5 g fiber
