Zucchini Pineapple Bread
3 eggs 2 cups sugar 2 teaspoons vanilla 1 teaspoon salt 1 cup crushed pineapple 1 cup shredded coconut 2 cups ground zucchini 1 teaspoon cinnamom 1 cup oil 2 cups all purpose flour 1 teaspoon baking powder 1 teaspoon baking soda 1 cups nuts (optional) Preheat oven to 350. Combine the eggs, sugar, vanilla and oil, beat well. Stir in zucchini. In a seperate bowl mix the dry ingriedents then slowly fold in the zucchini mixture. Stir in pineapple, coconut and nuts. Pour into 2 well greased loaf pans. Bake for app. 1 hour or until toothpick comes out clean -- Rec.food.recipes is moderated by Patricia Hill at .
