Default Spicy Tomato and Chevre Dip

Spicy Tomato and Chevre Dip

Serves 6

1 Tbsp olive oil
1-2 garlic cloves, peeled and chopped
1 14 oz. can diced tomatoes
1 orange, the rind grated from half of it
1 Tbsp fresh herbs such as basil, thyme or
rosemary, chopped
1/2 tsp cayenne pepper
1 Tbsp tomato paste
1 small log of goat cheese or chevre
baguette or crackers

Heat the olive oil in a saute pan. Add the garlic and saute a few
seconds. Add the tomatoes, orange rind, fresh herbs, cayenne pepper and
the tomato paste. Stir to combine and allow to simmer a few minutes to
reduce. Spoon the mixture into an oven proof dish. Cut the goat cheese
log in half and lay in the spicy tomatoes. Bake in a preheated 350
degree oven for about 30 minutes. A toaster oven is ideal for this dish.
A few seconds under the broiler will nicely brown off the top of the
cheese. Serve with crackers or slices of the baguette. Easily serves 6
guests prior to dinner with drinks.

HINTS:
Any sort of flavored diced tomatoes will work in this recipe. If you
can't use fresh herbs, substitute a teaspoon of dried. Also bear in mind
that the baguette slices are wonderful if they are first sauteed in
olive oil until lightly browned.
