Six Layer Dinner
California Rice Skillet
Chili Beans and Mac Casserole
Beef and Barley Chili


Six Layer Dinner

2 cups diced potatoes
1 cup onions
1/2 cup rice
2 green peppers
2 cup strained tomatoes or 1 pt tomatoes
2 cups hamburg
1 cup tomatoe juice.

Layer ingredients as listed.

preheat oven 350 degrees F for 2 1/2 hours





California Rice Skillet

1 1/2 cups uncooked white rice
1 lb ground beef cooked
1/2 green pepper - diced
1/2 tomato (or 1 whole small tom.) diced
8 oz mozzarella cheese
6 cubes beef bouillon
6 cups water
1 tsp dry mustard
Serves approx. 4

Heat water, mustard & beef bouillon to boiling. when the bouillon
dissolved add the ground beef and rice. Reduce heat slightly. Stir
to keep from sticking. When most of the water has evaporated add the
mozzarella. Turn heat to low.(You can add more or less depending on
how cheesy you like things) When mozzarella has melted stir in peppers
and tomatoes. Salt/pepper to taste Serve - we like to top it with Lea
& Perrins (Worcestershire sauce)





Chili Beans and Mac Casserole

1 tablespoon olive oil
1-11/2 pounds lean ground beef, chicken or turkey
1 tablespoon chili powder
2 onions, chopped
1 1/2 cups grated sharp cheddar cheese
1 can (15.5 oz) canned kidney beans (undrained)
(Original recipe calls for 54 oz of beans)
1 cup pitted black olives
1/2 cup grated sharp cheddar cheese

Saute onions in oil until soft. Add beef and cook until is no longer
pink.
Drain off any excess fat and add the chili powder, the 1 1/2 cups cheese,
beans, tomatoes, olives and macaroni. Spoon mixture into a 9x13 or
similar
dish. It will be very moist; the macaroni will absorb the moisture. Top
with the 1/2 cup cheese and bake at 350 degrees for 1 hour.





Beef and Barley Chili

1 tsp oil
1 cup onions, chopped fine or coarse..however
you like them
1 pound ground beef
1 3/4 cup beef broth
14 ounce can tomatoes
3/4 cup pearl barley
2 1/2 Tbsp chili powder
1 Tbsp garlic powder
1 tsp cumin
1 tsp salt
1 can corn(regular or creamed)
1 Tbsp peanut butter

Brown onions and beef in oil.Stir in rest except corn and peanut
butter,and bring to boil. Cover and simmer 10-15 minutes. Add corn
and peanut butter,simmer and stir constantly for 1-2 minutes. Serve
with a dollop of sour cream if desired. Serves 6-8 adults (or in my
case 2 adults and 5 growing kids!)
