Authentic Frijoles, Pinto Beans
1-lb. dry Pinto Beans 1/4 cup Lard or Shortening 1 tsp. bottled Garlic 1 small Onion, diced Clean and rinse beans, cull for bad beans, soak beans in water overnight. Drain off water next morning and put in a large heavy pot. All remaining ingredients. Add 1 scant Tbsp. Salt. Bring to a boil, cover, turn off heat and let sit 2 hours. Bring back to a boil, turn down to simmer and cook covered, stirring occasionally until beans are done but not mushy. Serve as you wish. Fritos Frijoles, refried beans Cooked pinto beans diced onion minced garlic 1 tsp or more ground Cumin. olive oil salt Pepper Jack Cheese Partly mash beans. Saute with diced onion and minced garlic. Add 1 tsp; or more ground Cumin. I use olive oil to saute' in. You'll need to salt beans to taste. Turn off hear when beans have taken on a dryness. Cover top of beans with Monterey jack cheese that you can buy shredded with jalapeno peppers in it. Right before serving, remove lid and stir cheese into beans.
