Standout Quick Breads

Elegant Banana Nut Bread

1-1/2 cups flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1/4 pound butter
1 cup sugar
2 eggs
3 ripe bananas,medium size
1 teaspoon black walnut flavoring
1-1/2 ounces each dark rum and brandy
3/4 cup chopped black walnuts

Sift together the flour, baking soda and baking powder and set aside. Beat butter in a
mixer, add suger, and beat until creamy. Add eggs one at a time. Mash bananas,and add to
mixer, mixing until blended. Add black walnut flavoring,dark rum and brandy. Add sifted
ingredients and mix to blend. Flod in chopped black walnuts. Pour into a greased and
floured loaf pan. Bake at 350 degrees for one hour, or until top is browned, and
toothpick in center of loaf comes out clean. Cool on wire rack for 5 min., then remove
from pan, and cool completely before cutting.
