Default Mojo-Marinated Tri-Tip

Mojo-Marinated Tri-Tip

Serves 4
Active time: 25 min
Marinate time: 4 hour 0 min - 8 hour 0 min
Total time: 4 hour 25 min - 8 hour 25 min

Salt and pepper
Tri-Tip (about 1 1/2 lbs)
1 1/4 cups Mojo Marinade, divided

Season beef with salt and pepper; place in deep dish. Cover with
1 cup marinade (reserve extra marinade for cooking). Marinate 4-8
hours in refrigerator.

Preheat grill on MEDIUM-HIGH. Sear beef about 5 min, until it
has changed color one-quarter of way up from bottom. Turn over; baste
(brush seared side with reserved marinade). Sear 1-3 min. Turn over
beef; baste. Reduce heat to MEDIUM; close cover. Cook beef to 5
degrees below desired internal temp, 10-15 min (refer to meat cooking
guide for final internal temp). Check by inserting thermometer halfway
into thickest part of beef.

Transfer beef to clean platter; let rest 5-10 min.
Can use extra marinade from bottle as finishing sauce.
