The Best Meatballs Ever
4 lbs ground beef 2 packets onion soup mix 1 green pepper, chopped 1 small onion, chopped 2 stalks celery, chopped 1 tube buttery crackers, crushed or 1 cup bread crumbs 2 eggs Preheat oven to 350 degrees. Line a large baking sheet with foil for easy cleanup and place a rack inside it. Combine all ingredients in a large bowl by hand and shape into 8-10 balls. I like to make large softball-sized meatballs, so that when served everyone has their own personal mini-meatloaf. Bake until the largest meatball reaches an internal temp of at least 155 degrees (at least 30 minutes). Served with brown gravy, mashed potatoes, and a crisp green vegetable like broccoli or peas. -- Rec.food.recipes is moderated by Patricia D. Hill at .
