Bars, Chinese Chews
Chinese Chews Bars, Chinese Chews Source: "A Treasury of Jewish Holiday Baking" by Marcy Goldman Yield: 14-20, depending on size 3/4 cup all-purpose flour 1 teaspoon baking powder 1/4 teaspoon salt 1 cup granulated sugar 1 cup coarsely chopped walnuts 1 cup coarsely chopped dates 2 eggs, beaten Confectioners' sugar, for topping Preheat the oven to 325°F. Lightly grease an 8" square pan. In a mixing bowl, stir together the flour, baking powder, and salt. Stir in the sugar, walnuts, and dates. Mix well, then add the beaten eggs to bind the mixture. Spread the batter in the pan. Bake for about 25 minutes, or until the batter is set and dry-looking. Cool very slightly, then cut into squares and dip the tops in confectioners' sugar. Poster's Notes: I made these to take to a friends "bring a sweet" dessert party and they were delicious and so easy. I did make them in the food processor, baked them a little longer than 25 minutes, cut them into 1"x2" squares, and just lightly dusted the tops with powdered sugar rather than actually dipping them into the sugar.
