Default Floating Fruit in Jam

I know we've covered this before, but I didn't save it and have
blonded out the responses. Made lots of nice strawberry jam lately,
but the fruit seems to be floating more than usual. Sometimes I get
this and sometimes not. More often when the set is softer and not
firmer, I think. I really don't care if its for the family, we just
stir it up, but for presents and the Fair, I like a nice jam. Oooh, I
remember now - call this "double layer jam" and act like I did it on
purpose, right? BTW, I didn't really like the strawberry kiwi jam,
but all my family did.
Thoughts?
