Lots of good recipes for chile and pork so I thought I would include this
link that has a few others as well as your request. I prefer mine grilled. Since I don't write my recipes down or use a cook book I make a rub with the following... Dried Santa Cruz red chili powder mild A little kosher salt A little garlic powder A little of this a little of that, pepper, a pinch of mex oregano maybe all depends on the mood. Once you have rubbed the chops and I mean cake it on then squeeze some fresh citrus over the top.. Limes and oranges are good. Once the chops are fired over natural mesquite to juicy perfection I let them rest in foil and serve with the following Fresh Pico de Gallo Sour creme lime wedges tortillas beans and rice |
