Crustless Feta and Cheddar Quiche

Source: Better Homes and Gardens

Makes 8 servings 8 carbs per serving so 64 carbs for the whole thing

Prep: 20 minutes
Bake: 40 minutes
Cool: 15 minutes
Stand: 15 minutes

Ingredients
Nonstick cooking spray
4 beaten eggs
1/3 cup unbleached all-purpose flour
1/4 teaspoon black pepper
1/8 teaspoon salt
1-1/2 cups cottage cheese (12 ounces), drained
1 10-ounce package frozen chopped broccoli, cooked and drained
1 cup crumbled feta cheese (4 ounces)
1 cup shredded shredded cheddar cheese (4 ounces)

Directions
1. Lightly coat a 9-inch pie plate with cooking spray; set aside.
2. In a medium bowl stir together eggs, flour, pepper, and salt. Stir in
cottage cheese, cooked broccoli, feta cheese, and cheddar cheese. Spoon
into the prepared pie plate.
3. Bake in a 350 degree F oven for 40 to 45 minutes or until a knife
inserted near the center comes out clean. Cool on a wire rack for 5 to 10
minutes before serving. Makes 8 servings.
