Default Crustless Quiche Recipes--two

I tend to use no or low fat cheeses in these recipes, but I'm sure
they'd be very delicious with the regular cheese. :-)

Aspargus Quiche

Ingredients:
1 pkg (10 oz) frozen aspargus tips, thawed & drained
1 C cottage cheese
1 C sour cream
2 large eggs
1/2 C Parmesan
1/3 C chopped scallions
1 clove garlic, minced
1/3 C flour
2 tsp Dijon mustard
2 tsp baking powder
cooking spray (or whatever you'd like to use to grease your pan)

Preparation:
Preheat oven to 350 degrees
Spray a 7X11 baking dish with cooking spray.
Arrange asparagus in a single layer in bottom of the pan.
In food processor, whirl cottage cheese, sour cream, half of the
parmesan, scallions, garlic, flour, baking powder, and mustard for @10
seconds. Pour over the top of the asparagus.
Sprinkle the rest of the parmesan on top.
Cover with foil and bake 30 minutes; Remove the foil and bake another
15 minutes.
Serves 4

Mexican Quiche:
Ingredients:

2 C Egg beaters
1 C milk
1/2 C sliced mushrooms
1 onion finely chopped (@ 1/2 Cup)
16 oz cottage cheese
8 oz cheddar cheese, shredded
2 C chopped fresh broccoli
1/2 C chopped pepper (red or green)
1/2 C salsa
1/4 tsp salt
1/2 tsp pepper
cooking spray

Preparation:

Preheat oven to 350 degrees
In a large bowl, mix all ingredients
Pour into 9X11 baking dish sprayed with cooking spray.
Bake 1 1/2 hours or until eggs are firm and top is slightly brown.
Serve warm with salsa fresco and cilantro
Makes 8 servings.

Thanks, Michelle! This is just what I have been looking for. I try to keep
my carbs low, but I also opt for as many low-fat items as possible (although
the two do not always go together).
