Default cooking for family


I have a new adorable baby granddaughter (Eliza Lauren) and I want to do
some cooking for Mom, Dad and big brother. Since I usually only cook
for myself and rare company and all my recipes were lost in a move, I
could sure use some help with dishes to take over to my kids. I thank
you in advance and direct mail is OK.

Congratulations on the arrival of Miss Eliza, Granmaw. Mazel tov.
What do they like to eat? What's your objective? Are you cooking for
her freezer? Delivering hot meals?

Beef stew - but not for the freezer unless you leave the potatoes out
Macaroni hotdishes
Meaballs - nekkid, and she can use them with her favorite sauce and
starch
Hearty vegetable soup

Breezy Baked Chicken

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
8 boneless -- skinless chicken
breast halves (2#)
1 jar fruit-only apricot preserves -- (10 oz.)
1 pkg. dry onion soup mix -- (1 oz.)
1 bottle non-fat Russian or Catalina salad dressing -- (8
oz.)

Preheat oven to 325. Place chicken breasts in 9x13" pan that has been
sprayed with a nonstick vegetable coating (Pam). Combine preserves,
soup mix and salad dressing and spread evenly over chicken. Bake in
preheated oven for about 1 hour or until chicken is no longer pink.
Makes 8 servings.

Turkey Florentine

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 pkg. frozen chopped spinach -- (10 oz.)
3 Tbsp. butter
3 Tbsp. flour
1 tsp. MSG
1 tsp. salt
1 1/2 cups milk
1 Dash cayenne pepper
1/4 cup grated parmesan cheese
1/2 cup light cream
2 cups diced cooked turkey (or chicken)
1/3 cup dry bread crumbs

Cook spinach; drain well. Put in 1-1/2 quart baking dish. Make a white
sauce using 2 Tbsp. of butter, the flour, MSG, salt, cayenne, and milk.
Add cheese and cream, cook over low heat until cheese melts. Add turkey
and pour over spinach. Sprinkle with bread crumbs, dot with remainder
of butter. Heat in 350 oven until heated through. Serves 4-6.
