Bring plenty of food - we're out of Christmas leftovers <g>. I have to go
out to the shops now, so I'll bring back some beer. Just try not to disturb

I was going to bring a roasted turkey, but it might not be too good after 21
hours on the plane. For a midsummer lawn party, how about this cold soup
from Emeril?

Cantaloupe, Honeydew, and Sweet Onion Gazpacho with Crispy Prosciutto

Ingredients
1/4 pound thinly sliced prosciutto
1 cup coarsely chopped cantaloupe, plus 3/4 cup finely diced cantaloupe
1 cup coarsely chopped honeydew melon, plus 3/4 cup finely diced honeydew
melon
1 cup coarsely chopped sweet onion, such as Vidalia, Maui, or Walla Walla,
plus 1 cup finely diced sweet onion
1/2 cup coarsely chopped celery, plus 1/4 cup finely diced celery
1/2 cup coarsely chopped red bell pepper, plus 1/4 cup finely diced red bell
pepper
1 cup coarsely chopped, seeded, peeled cucumber, plus 3/4 cup finely diced,
seeded, peeled cucumber
1/4 cup fresh lemon juice
1/4 cup fresh lime juice
3 slices white bread, crusts removed and cubed
2 tablespoons minced jalapeños
2 teaspoons minced garlic
1 tablespoon snipped chives
1 tablespoon finely chopped parsley
1 tablespoon finely chopped mint
1 tablespoon finely chopped cilantro
1/4 cup extra-virgin olive oil
1 tablespoon salt
1 teaspoon finely ground black pepper

Preparation
1. Preheat the oven to 375 degrees F.

2. Cover a baking sheet with parchment paper and bake the prosciutto until
crisp, about 10 to 12 minutes. Remove from the oven and cool.

3. Combine the coarsely chopped ingredients (cantaloupe, honeydew, sweet
onion, celery, red bell pepper, and cucumber), lemon juice, lime juice, and
bread in the bowl of a food processor or blender. Puree on high until
smooth.

4. Combine the finely chopped ingredients, jalapeños, garlic, chives,
parsley, mint, cilantro, and olive oil in a large bowl. Stir well to
combine. Fold the pureed ingredients into the chopped ingredients. Add the
salt and pepper and stir well to combine. Let rest at least 1 hour, covered
and refrigerated, for the flavors to blend.

5. Serve chilled, garnished with the crumbled crispy prosciutto.

Makes about 4 to 6 servings

Oh, that sounds pretty good, actually. Prosciutto is a classic
accompaniment to melon. Onion goes quite well with melon too,
especially sweet onions.

I have known of salads in the south, mixing onions with melon. Pretty
good.

Melon en Surprise?
-----------------------

Choose a honey dew melon that is just ripe, cut a round incision in the
top and remove the piece.

Scoop out the seeds and filament, scoop out the flesh with a spoon, and
cut it into bite sized pieces, sprinkle the inside of the melon with
plenty of sugar & orange or lemon juice and refill it with alternate
layer of sliced strawberries (or raspberry puree) and the diced melon,
sprinkling each layer with sugar & lemon juice.

Pour in 1/2 cup kirsch (cherry brandy) or demi - sec or sweet champagne
or liquor of choice, close the melon with the reserved piece and seal
the with a thin coat of butter. Keep refrigerated for 2 hours. Serve
with a spoon into a well chilled shallow bowl or small tulip champagne
glass or small chilled bowel.

Yes, I have tried it. It wasn't gross, but it wasn't my personal favorite. I
am not a fan of prosciutto in general, nor am I wild about the combination
of prosciutto and melon.

However, other people seem to like the combination a LOT more than I do.
It's one of the most popular Italian appetizers around, which is why I
wouldn't have qualms serving the gazpacho to other people.

To be fair, I haven't tried prosciutto and melon, so I can't comment
on that, but onion and melon sounds just, well, *wrong* to me.

Haven't tried the proscuitto, but I've tried other good, thin-sliced ham
draped over melon and it was very good. Haven't tried the onion. My
favorite is a sprinkling of Tony Chachere's, a creole seasoning with
salt, red pepper, garlic and other spices. Chili powder works also,
although chile powder with a little salt might be better.

No wonder all the dogs in the neighbourhood were barking when I got home! I
was gone many hours, and forgot the beer, but bought a digital camera <g> -

For the coffee? My SIL puts it in his eggnog. Smooooth!

Got a lot of mileage out of four used roast beast bones: simmered them in
the stockpot to make a killer broth for onion soup, and then picked off 2
cups of meat scraps for a chili.

For those who recall that I lived on the Cape, I've just moved to Boston's
Back Bay, where I will watch the New Year's Eve parade from my window.

Oh, thankyou!! It's not actually till Wednesday, but I went shopping for
the camera yesterday. My sister and her family are coming over New Year's
Eve, staying the night and we're having a barbecue lunch on New Year's
Day which will also be a birthday celebration. Now I have a digital
camera, maybe I can take photos of the food for all to see <g>.

Unfortunately I go back to work on Tuesday so will be working on my
birthday. I think Rob's going to get me another little thing so I can
have something to unwrap on Wednesday.

Better get back to cleaning the house and working out the menu for
Sunday.

Improvise, any small container will work and placing them in the freezer
for 1/2 an hour is usually sufficient to chill them.

If you live near a "Chinatown" you can get lovely little covered
porcelain bowels of about 1/2 cup volume that are nicely decorated and
quite inexpensive, 1 - 2 dollars apiece, originally i was getting them
for 75 cents per till the owner of the store decided i liked them enough
to pay more for them.

The word "bowel" means "intestine."

Psst, Joseph. I think Margaret was being a bit cheeky <g>. You would
actually want a small chilled bowl for this recipe, a bowel is your
intestines.

There are several variations of this recipe and various fruit and herbed
liquors work well in them, some of my favourites being framboise, creme
de cassis, Izzara, Raspai, Drambuie, Pernod & creme de menthe. The
various fruit flavoured brandies, peach, apricot, plum, apple etc. are
also very good in these recipes.

Melon cocktail
------------------
Cut the flesh of ripe melon into 3/4 inch cubes and place in a timbale
on ice. Sprinkle with sugar and allow to chill well.

Just before serving, sprinkle with Maraschino, Kirsch, brandy or white
port according to taste and arrange in small glass coupes in the same
way as other fruit cocktails.

Melon Frappe au Vins ---Iced melon with various wines
-------------------------------------------------------------------
Choose a cantaloup or other similar type melon which is just ripe. Make
an incision around the stalk approximately 3 & 1/4 inch in diameter and
remove this piece.

Using a spoon remove the seeds and filament from inside then pour 1 &
1/4 cups Madeira, port, marsala, champagne or brandy according to taste
into the melon. Add 2 tbs. sugar and replace the top; place on crushed
ice in the refrigerator for 2 - 3 hours.

To serve; send to the table whole; take out the top piece of melon and
remove the inside by scooping it out with a long handled spoon into
small cups with a little of the wine and serve immediately.
