Got a big harvest of super watermelons this year at 45N,77W. With the very
hot weather, they are sweet and pink. Chilled in the fridge they are a refreshing treat on a hot day. I don't know what to do with them. They do not keep very well. I am tempted to drill a hole in one and slowly dump vodka into it's flesh. Any other ideas are welcome. Farmer John |

You could puree the watermelon and cook it down for jam or freeze it
for smoothies, mix in some sweetened yogurt and gelatin for a dessert. The same with cool whip added and made into a mousse type dessert. My mother used to make candied watermelon rind, thin sliced and cooked in syrup for putting on toast or ice cream in the winter. Ann |

Put the pot on low fire and bring to a simmer, mixing thoroughly. It must thicken a little so boiling will be somehow long. As the juice begins to thicken, pour in cups, and cool in the refrigerator. Serve cool, and before serving, garnish the cups with candied fruits and/or chopped chocolate and/or chopped pistachios and/or (if available) jasmine flowers dipped for a minute in boiling water (or syrup). -- QQG |
