You could puree the watermelon and cook it down for jam or freeze it
for smoothies, mix in some sweetened yogurt and gelatin for a
dessert.The same with cool whip added and made into a mousse type
dessert. My mother used to make candied watermelon rind, thin sliced
and cooked in syrup for putting on toast or ice cream in the winter.
