Default "Dutched" or regular cocoa

I was the original poster, and have learned a lot from the subsequent
discussion. Just wanted you all to know that my chocolate sponge cake emerged
unscathed and yummy even though I used regular cocoa in the recipe instead of
Dutch processed cocoa. From now on I'll keep both types on hand.
