Default Another Carrot Recipe Question

When we were on vacation last year, we ate at a Hawaiian influenced
restaurant. The raw carrots were shredded like cole slaw and had a
creamy sweet sauce. I thought the sauce was sweetened mayonnaise so
never asked. It was very good so I tried making the dish at home but it
wasn't the same. Any ideas what this sauce might be?

perhaps something like mayo thinned with pineapple
juice? what else did you notice about the carrots?
Other ingredients??

Pineapple juice is good. I frequently make shredded carrot salad. The sauce
I make is mayonnaise, sugar, and cream to make it the right consistency. I
don't over-sauce it. I always add raisins to it. My mother-in-law used
crushed pineapple, so there was probably some pineapple juice in her sauce.
I prefer mine, but her's was perfectly edible.
