Default Furi vs. Global

I'm quite happy with the Globals I have -- a 7" Santoku is the one I
always reach for.

I used a Furi for a few hours in a class and found it a bit slippery
and clunky in comparison. I didn't like the way it felt.

I recently got a uber kewl Santoku 7" designed by Porsche and made by
Chroma: unusual design but same one-piece-construction look. It's
macho like the Furi, but much much cooler. (I know this isn't the
reason to buy, but... :-). It, like the Furi, is also heavier than
the Global; my fave Global's 6 oz while the Chroma is 8 oz. I'm not
yet as comfortable with it as with the Global. Here's a pic:

I'm a fan of Furi, but only a recent one, I admit. A friend of mine
who cooks professionally was much taken with my big Furi santoku. He
hasn't yet seen the little one I just bought. Also Bob Pastorio, who
knows a thing or two about matters culinary likes Furi quite a lot.

If there's a Sur la Table within striking distance of you, pay them a
visit. The one in Dallas has a wide range of Globals and three sizes
of Furi santokus. I was able to hold them in my chopping hand for a
while and determine which felt good to me. These things can be pretty
personal at base.

Sure. Don't buy it from a picture. Go where the knives are and heft
them. See how they feel in your hands. See how the balance works for
you. Forget brand names and look for quality levels that are within
your budget.

I've handled both knives in several sizes and I prefer the Furi
products. I have big hands and the way my hand feels on their handle
just works better. They're heavier than the Globals, too, and I like
that. My hands don't slip on a Furi, wet or dry (they say they have
some sort of microgrooves or something that prevent it, IIRC).
