Default What do you think of Chilean Sea Bass


New to me. It looks like a beautiful piece of white meat fish.
On the 'Net there are multiple ways to cook it.

I have had it a couple times. It is very good. One of those times was in
a Peruvian restaurant in Toronto. It was delicious. but the portion was
way to small. It was so small that I made note.... four forkfuls of
fish. It was probably about 3 oz of fish.

It's a made-up name for Patagonian toothfish, caught in the Southern
Ocean. Provenance can be problematic, but it can be sustainably caught.
Plenty of Wiki info. It cooks up super easily and yes, it's pretty
good if you're a fan of whitefish in general.

I think that disappointingly small portion had more to to with that
restaurant that anything else. It was a place our son took us to during
some sort of summer fining festival where restaurants offered fixed
price three course meals. All three courses where skimpy. My ceviche
appetizer was no more than about two ounces. There was that tiny piece
of sea bass and desert was bread pudding made from croissants.It came in
a small ramekin. It would have taken at least four of them to make a
decent portion of bread pudding. The food was all good, but I would
recommend having a meal before going there for dinner.

Patagonian toothfish is similar to cod except it's milder and more tender. It's quite a remarkable fish. It might be tricky to cook.

I guess Patagonian is too complicated a word and toothfish sounds like
an ugly fish with one huge tooth.

I found Chilean Sea Bass to be quite disgusting, probably due to
Pinochet contamination. Peruvian Sea Bass is much nicer.

I was afraid it might be difficult to cook but when I checked the 'Net
recipes and directions were there for every kind of cooking method .
I'm sorry now that I didn't order it today. Hope it is still there
next week.

I love salmon. I have it in some form at least once a week... salmon
fillet, salmon steaks or sandwiches.. even canned salmon.

You indicated that it was a thick piece. Better to grill or sear in a
pan then finish in the oven.

I had a work day bonus once. After I showed up at a house to paint
inside, the husband went off fishing in a boat near the mouth of the
Chesapeake Bay with 2 buddies.

They all caught their limit of Black Sea Bass. It's a white fish
probably similar. He came home while I was still there and gave me two
fresh fillets to take home. Both were about 3/4lb.

I got home, wrapped one and froze it and cooked the second one that
night with my favorite fillet method:

- tiny smear of mayo (and it melts on to just form a clear glaze)
- a layer of minced onion
- squeeze of lemon juice

Then broiled until the onions brown and fish is cooked.
Only a few minutes.

That's the way I cook most of my fresh fish.

The trouble with black garlic is that it doesn't taste much like garlic. It has a surprisingly sweet, mild, taste.

What I really don't understand is the Vegetarian yet Pescetarian mindset.

If you don't want to kill animals for food, fine. Why don't sea animals
count? All are living creatures.

Sounds like animal racism to me.

It's a start. The next step is to stop eating fish/seafood. We're
working on that. Then there's dairy. That's a nasty, animal abusing
industry too. It ain't easy. And in the meantime you eat anything you
want and preach to me.

To me too. It's just not vegetarian if you eat meat from the sea.

I am NOT a vegetarian. To prove it, I ate close to 1/3 lb Cod
yesterday.

There's interesting history behind westerners and 'fish isn't meat'.
Doesn't carry to other cultures at all.

There is that Roman Catholic about eating fish on Fridays because they
weren't supposed to eat meat in some sort of demonstration of sacrifice.
