Snow day here, so I had to stay home and do nothing.
Vietnamese marinated thin sliced pork butt (thit nuong), do chua (pickled carrot and daikon), cucumber, jalapeno, and my soon to infamous mam tom hue served over rice (com). https://i.postimg.cc/NGXCVqph/Com-Thit-Nuong.jpg The mam tom hue (Hue-style sour shrimp) I think was an RFC Facebook exclusive since it was much too hardcore for most folks here. But basically I mixed 1.5lbs of whole small, raw, shell-on shrimp, with fish sauce, sugar and peppers and left out in the sun for a couple weeks until it "ferments" (rots), and then inside on the counter for another week, and then 3 months in the fridge.
