Snowpocalypse 2021 - Com Thit Nuong Breakfast
 
Snow day here, so I had to stay home and do nothing.

Vietnamese marinated thin sliced pork butt (thit nuong), do chua
(pickled carrot and daikon), cucumber, jalapeno, and my soon to
infamous mam tom hue served over rice (com).

The mam tom hue (Hue-style sour shrimp) I think was an RFC Facebook
exclusive since it was much too hardcore for most folks here. But
basically I mixed 1.5lbs of whole small, raw, shell-on shrimp, with
fish sauce, sugar and peppers and left out in the sun for a couple
weeks until it "ferments" (rots), and then inside on the counter for
another week, and then 3 months in the fridge. Really good shit.

That looks good, but it's a little intense for breakfast. I'll stick
with my nice, bland, oatmeal.

That's a bunch. I'm done snowblowing and I'd swear it was more
than the 8" they promised. Maybe there was some drifting. Looks
like we're due another 1.5 on Thursday.

I finished mine about two hours ago. It started snowing again an hour
ago and I am likely going to have go out and do it again.

You getting it is probably the reason that the -40 windchill
temperatures we have been having for the last week are ameliorating.
It's forecast to be around zero celsius tomorrow and possibly above
freezing later in the week.
