Made this today and it is excellent. Had some cranberries left from
T-day so used them up here. Recipe came from www.cookingprofessionally.com Cranberry Orange Bread It's cranberry season! Enjoy this sweet and tart Cranberry Orange Bread€”the perfect snack or special breakfast treat for the holiday season. Double the recipe and share with a friend to spread a little cheer! Ingredients: 1 orange 2 cups all-purpose four 1 cup granulated sugar 1 1/2 teaspoons baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1 cup chopped cranberries (fresh or frozen) 1 egg, beaten 1/4 cup butter, melted Directions 1. Preheat the oven to 350 degrees F. 2. Grate rind from orange. Then, squeeze the juice and add enough water to make 3/4 cup .. Set aside 3. In a large bowl, whisk four, sugar, baking powder, baking soda, salt, and orange rind; stir in cranberries. 4. In a small bowl, whisk together egg, butter, and orange juice; stir into four mixture just until blended. 5. Spread the mixture in a greased 9x5 loaf pan. 6. Bake for 50 to 60 minutes or until in toothpick (or cake tester) comes out clean. 7. Let cool in the pan for 10 minutes, turn out onto a rack, and let cool completely. |

That looks good, may try it...I might add some walnuts or pecans...still have a bag of cranberries in the freezer from last year, lol...
