Default Lucky me... Fresh salmon

I took the owner of the cigar lounge home tonight. He walks home and
posessed a heavy cooler full of fresh salmon he caught in the Pacific
last week. As a thank yuo for taking him home, he handed me a healthy
filet.

Since the wife left this PM to see the mother'in'law, I instantly knew
what dinner would be.

Arborio rice cooked in caramelized onion, scallion, green beans,
parsley, garlic and covered.

The salmon was fried skin on, then broiled. Lemon spritz and a dry rub.

Cucumber salad with creme fraishe dressing.

Pineapple caramel. Cut into eight wedges. Cooked in a cup of brown
sugar, half cup orange juice, 1tbsp vanilla extract. Heavy cream at the
end.

Delicious.

Them's my kind of vittles, except for the pineapple. I wish I had
that good stuff to eat.
