I got some of these refrigerated rice paper rounds and thought I could use
them for desserts. Alas, searching for recipes was not promising. Found one with chocolate and bananas. Didn't look at the recipe as the person I'm making dessert for does not like bananas. Found one by Giada that is filled with fruit and Pad Thai noodles. As I read the recipe, I envisioned a slimy mess and indeed, some of the reviewers agreed with me but they did say that the dipping sauce was delicious. Found a similar recipe with just fruit but also mixed reviews. The problem as I see it is that wrappers were just soaked in water and used as is. One reviewer said this was a summer roll and not a spring roll as a spring roll would be fried or possibly baked. I was envisioning something crispy. I have made quick desserts using Phyllo dough that was cut in strips, then piled into a nest, filled with fruit and baked. Was hoping to recreate something like this but gluten free. I have not been able to locate any prepared gluten free Phyllo dough. I have seen recipes but they call for things like Expandex. Not even sure what that is. And I imagine that making Phyllo dough from scratch would be a pain! I made puff pastry from scratch many years ago and remember how fussy that was. I did buy premade gluten free puff pastry but it's not cheap. Has anyone successfully used these wrappers to make a dessert? If so, could you give me the details? Another thing I might try... The next time I make something with Pad Thai noodles is to save some out and see how they fry up. I used to make snacks with leftover pasta, set on paper towels to dry, then fried. I will say this again. I *want* to do this! I love to cook and bake and I love a challenge. My own diet is limited given my various medical problems and pickiness. When I make food for myself, there isn't a lot of cooking involved. I can make one pot of food and make it last for most of the week. And I eat a lot of raw veggies. So a lot of my meals are not even cooked. If I were not cooking for him, I would still be cooking for others because it's what I want to do! |

If your store has them, they will be right beside egg roll wrappers in a refrigerated section. Just ask. I often just use the thicker egg roll wrappers. |

I have not checked, but why not find the recipe and make your own? Probably you will want to experiment with thickness; perhaps you will end up with an ideal in between egg roll & spring roll. I am guessing egg, flour and some sort of shortening (butter or oil). Will you cook up the filling first, or fill them with berry & sugar mix?
