Default Spring Roll Wrapper Desserts?

I got some of these refrigerated rice paper rounds and thought I could use
them for desserts. Alas, searching for recipes was not promising. Found one
with chocolate and bananas. Didn't look at the recipe as the person I'm
making dessert for does not like bananas. Found one by Giada that is filled
with fruit and Pad Thai noodles. As I read the recipe, I envisioned a slimy
mess and indeed, some of the reviewers agreed with me but they did say that
the dipping sauce was delicious. Found a similar recipe with just fruit but
also mixed reviews.

The problem as I see it is that wrappers were just soaked in water and used
as is. One reviewer said this was a summer roll and not a spring roll as a
spring roll would be fried or possibly baked.

I was envisioning something crispy.

I have made quick desserts using Phyllo dough that was cut in strips, then
piled into a nest, filled with fruit and baked. Was hoping to recreate
something like this but gluten free. I have not been able to locate any
prepared gluten free Phyllo dough. I have seen recipes but they call for
things like Expandex. Not even sure what that is. And I imagine that making
Phyllo dough from scratch would be a pain! I made puff pastry from scratch
many years ago and remember how fussy that was. I did buy premade gluten
free puff pastry but it's not cheap.

Has anyone successfully used these wrappers to make a dessert? If so, could
you give me the details?

Another thing I might try... The next time I make something with Pad Thai
noodles is to save some out and see how they fry up. I used to make snacks
with leftover pasta, set on paper towels to dry, then fried. Larger shapes
as is, spaghetti and the like, dropped in small nests. Fry then sprinkle
with salt for savory or powdered sugar for sweet.

Ideally he wants a crispy texture with fruit. He prefers blueberries but
also likes strawberries. Suggestions welcome but must be wheat free. Thanks!

Here's the method, choose the filling.

Of course you're going to reject them, so I'm running a book on how
many objections you can come up with.

Place your bets now, ladies and gents.

Suggestions? Maybe time to kick him to the curb and find a new
gardener.

She doesn't really want suggestions that she will use. She is just
looking for suggestions that she can reject for some reasons that will
make her look special.

LOL No bet. What she'll say now is *he* doesn't like apples.

Thanks! That should work. Just have to work out the blueberry filling. Am
not too familiar with blueberries as I don't like them myself.

You're right. He doesn't, but I should think another filling would work. He
likes all berries.

No, it's not. If he wants all this specially prepared food he should
learn how to cook it for himself.

I will propose for her to use dingleberries for the filling.

But Jill, you know this is all too weird. There is no gardener. Her
husband hated her cooking so much he used to stop for supper on the way
home. Now we are supposed to believe that she is catering to a gardener
whose food likes and dislikes are as whimsical as her own?

I will say this again. I *want* to do this! I love to cook and bake and I
love a challenge. My own diet is limited given my various medical problems
and pickiness. When I make food for myself, there isn't a lot of cooking
involved. I can make one pot of food and make it last for most of the week.
And I eat a lot of raw veggies. So a lot of my meals are not even cooked. If
I were not cooking for him, I would still be cooking for others because it's
what I want to do!

Yes. But they are labeled as Spring Rolls. So they won't ever get crisp?
Where do I find the crisp ones and what are they called?

Spring roll wrappers are hard to find even in my area. If your
store has them, they will be right beside egg roll wrappers in a
refrigerated section. Just ask. I often just use the thicker egg
roll wrappers.

I have not checked, but why not find the recipe and make your own? Probably
you will want to experiment with thickness; perhaps you will end up with an
ideal in between egg roll & spring roll. I am guessing egg, flour and some
sort of shortening (butter or oil).

Will you cook up the filling first, or fill them with berry & sugar mix?

And probably you should top with whip cream or ice cream.

Could somebody tell Julie (since I'm confident she still has me killfiled)
that we could hazard a guess as to how they'll behave if she posts some
data from the label. Brand name, how it's described on the label, ingredients
list. Or better yet, she could search for that on the web and post a link
to the information.

I managed to find these, which might work:

not only desserts, which you can make with this methodology easily, but the most fun appetizers for a gathering

Forget crispy AND gluten free. Go for soft, gluten free dessert crepes.

But aren't egg roll wrappers made of wheat? These were at Winco in the
vegetable section. They are these, but in a round package:

The thing is, they have to be wheat free and dough that is wheat free is
super hard to work with and bake. Which is why I wanted something pre-made.

It is all about him. And it's an intolerance.

If they are made of wheat then they won't work. What I bought are made of
rice.

That is the name on the package but they also say "Spring Roll",

But aren't Won Ton wrappers made of wheat? The issue is I can't use wheat.

Bull shit. You asked if anyone had used those wrappers to make a
dessert. That is not something premade. You said you had the wrappers.
