Default Apple Stuffing

I've always made plain, traditional turkey stuffing with not much additions
other than sautéed onions and celery. Shamefully, I use a bag of store
bought herb stuffing cubes and basically follow its recipe. I usually have
enough to bake in a medium-sized casserole dish after stuffing the bird.

Someone somewhere advocated the addition of apples as giving it just the
right of amount of sweetness.

I want to try that this year, but my guests are all used to the plain herb
kind. I don't want to risk leaving my guests with no stuffing at all if they
don't like the apple mix. So I plan on making the plain herb kind, stuffing
my bird with it, then adding apples and whatever to the leftover stuffing
for the casserole.

Does anyone have an apple stuffing recipe that starts out as the traditional
kind with sautéed onions and celery? I'm not keen on sausage, so I've been
bypassing those as I do my search for one.

FoodTV has an Apple-Cranberry Sage Stuffing I might be able to improvise
with. But I'm not sure how the addition of dried cranberries is going to go
with my guests, so I'd like a few more options.

Also, for those who use store bought stuffing mixtures: Do you think the
cubes or the crumbs make better stuffing?

Any suggestions are appreciated!

You don't really need a recipe. Just chop up some
apples and throw them in with your normal stuffing.
That will work fine.

Same here - I just rough chop several Granny Smith apples and throw them in.
If you're going to prep the apples way in advance drop the chunks in some
acidulated water.

You don't hear many people refer to Chervil. I like it. I also add it to
some soups and to some egg dishes.

Thanks for your suggestions everyone. I came across a recipe at
AllRecipes.com that dresses up the simple apple stuffing a bit and looks
pretty good.

I'm going to give it a try this year. (3 eggs seem like an awful lot so I'm
going to have ponder that a bit. And the apple juice will make for an
interesting addition since I would have used chicken broth in it.)

The "apple and onion dressing" in the Joy of Cooking is very very good
and reliable. Sorry, the book currently in a room with a sleeping baby.
I recall it as 7 cups fresh bread crumbs (I tore with a fork) and 3 cups
chopped tart apple stirred into
one cup onion
one cup chopped celery
a clove of garlic
sauteed in 3/4 cup butter for 3 minutes.

Once the bread/apple is stirred in, stir in some paprika, salt and
pepper, a quarter cup finely minced parsley.
I baked mine at 325 for about 50 minutes and every little bit was eaten.
