They may be wildly popular in some areas and all but unheard of in others. Kummelweck is an example of that. It is widely available in western NY. Beef on Weck is as commonly available in bars and restaurants in the Buffalo as their famous chicken wings. Kummelweck is soft roll with coarse salt and caraway seeds sprinkled on top. I don't know why the product has not spread across the country. |

He hates mushrooms and I refrain from cooking them, so I only get veal with morels when we go out. We like chicken (and turkey) quite a bit and eat a lot of it. Tonight we're having chicken stir-fried with soy sauce and onions. Tomorrow it'll be Sate Babi: Sate Babi (pork sate) 3 T finely chopped onion 2 garlic cloves 2 t galangal (laos) 1 T peanut butter 1 t lemongrass powder (sereh) 1 t tumeric 2 t coriander 1.5 t cumin 0.5 t red pepper flakes 3 T lemon juice 1.5 t salt 1 T brown sugar 1.25 C coconut milk 1/2 C kecap manis (Indonesian sweet soy sauce) 1 to 1.5 lb boneless pork The first N-1 ingredients are a marinade for the pork, which is cut in cubes, skewered, and grilled. I usually reserve some of the marinade as a dipping sauce. Cindy Hamilton |
