Default Sucess

Dinner turned out great. Only too much for two people, tomorrow I'll
freeze about half. Glad I only baked 4 sweet potatoes. Wasn't going
to but at the last moment I whipped up 'bout a quart of gravy.

Yes, pretty chilly for November, dropped to 10ºF today, 11ºF now.
Only thing is I'm getting too old for this, I'm going to have to learn
how to cook for just two. At the market looking for a turkey I was
actually thinking if one would be enough, and should I do hams too. I
still can't get over having to prepare holiday meals for a crew of 400
plus all the guests. My wife tells me I should have opened an eatery
on the main drag here where all the contractors pass, I'd clean up,
With hearty soups, stews, and fresh baked bread I'd sell out every
day. If only I were 40 years younger. I propositioned our DIL who
likes to cook that I'd set her up and show her the ropes but like most
young folks she's lazy... she'd rather text all day than chop veggies
and ring the cash register.

restuarant.

One of the things I do is rub the bird down all over with half a lemon
and half an orange, then place the squeezed rinds in the cavities.
The turkey liver went outside for the critters, and I was lazy so
after simmering the neck, heart and pupik* for the gravy those got
tossed outside as well. just didn't feel like picking the meat from
the neck and chopping it up with the giblets. The gravy turned out
fine without all those bits as there was plenty of drippings.
14+ pounds was a big turkey for just the two us, looked like we
hardly put a dent in it... will freeze a bunch today. For us the
kasha varnishkas are just as good as the turkey and I always make
plenty to freeze some anyway.
*Pupik - Navel, belly button, gizzard, chicken stomachs

There are mushrooms, onions, curley leaf parsley. and the buckwheat
groats are soaked in beaten eggs until absorbed. Of course butter,
s n'p, a bit of msg, and turkey giblet stock. Takes longer to prepare
but is much more healthful than typical bread stuffing and far
tastier.
