The Dutch and Belgians season mashed spuds with a wee bit of nutmeg. Kale is very easy to grow and the best is from harvesting the young leaves.... I grow kale, about 10-12 heads, and keep picking the outer leaves throughout the growing season before the become too large and tough, which is way into fall. Ed, I am with you. No matter what I have done with it, the bitterness always comes through.

Although we both need more B vitamins, I need iron and he needs D. We eat a lot of vegetables, including raw ones. |

I've never prepared kale myself but my local Kroger was stocking 'Super Food Salad' in their deli area, but no longer. It had kale, a few grape tomatoes, a bit of shredded carrot, a smidge of red onion, some chopped celery, blue berries, a scattering of sunflower seeds, and peanuts. An ultra light vinegar and oil dressing was tossed with all the makings. Supposedly, when kale is to be eaten in a salad it should be 'massaged' for about 5 minutes to make it tender. The massaging breaks down the kale and reduces it in size dramatically making it tender as well. |
