No, the home version Ed (poorly) described is not at all like the
pre-rinse faucet you're vaguely referring to. For one thing a pre-rinse
faucet hose is not retractable, for another there's a lever where you
hold it, just like a garden hose nozzle, that turns the water on and
off. There's a separate spout for non-spraying water. The pre-rinse
faucet produces much higher pressure than the home version. Here's a
very clear image of something that looks like what I've used:

Thanks for that. I have looked around since this thread started and I have
seen a lot of different ones which do a similar job. I don't have one and I
hadn't really been interested in looking at them. Maybe next time

I doubt too many would want that for a home kitchen... that photo
looks like a set up in a county morgue, or maybe for a Proctologist.

Default Pull down kitchen faucet

I have one of these faucets and really like it. The long pull-out hose makes it easy to rinse the sink or fill heavy pots sitting on the nearby counter. What I don't like is that the handle is on the right-hand side, which makes it awkward for a right handed person. When I approach the sink holding a glass, it's usually in my right hand, I have to reach across the faucet with my left hand to access the handle. If I'm trying to fill a small pot that is in my right hand, again, I either have to switch the pot to my left hand, or awkwardly reach across with my left hand to turn the water on or adjust the temp. The handle should be in the middle, not on one side or the other. Not a huge problem, but annoying none the less.

Of course, you're going to have to put the sink on the opposite side of the kitchen. It's a small price to pay to be able to hold a glass and operate the valve lever at the same time.
