We love eggplant cooked many ways but a good caponata is to die for. Progresso Foods used to have caponata in small cans (6 oz) but unfortunately I haven't seen them in perhaps 30 years... they likely lost money on the recipe, I don't know. For a long time now I prepare my own. There are many recipes, as many recipes as there are Sicilianos who prepare caponata. I prepare mine Sicilian Brooklyn style with olives and white raisins, as mandated by The Mob... served with semolina bread and plenty dago red. |
