Default Wendy's Chile

Wendy's chile is nothing special but comes in handy in a pinch or when I don't feel like wasting a lot of time cooking. I buy a bucket of the stuff - family size, good for 6 or 7 meals. I eat the same thing 6 days in a row. But I doll it up a bit first.

In 3 or 4 tablespoons of olive oil I saute a bunch of sliced onions, sliced mushrooms, diced bell pepper, a jalapeno, and maybe some celery if I have any on hand.

I let that go for about 6 or 8 minutes, then add a bunch of roughly cut parsley, a pound or so of skinned roma tomatoes cut in chunks, and about 6 cloves of garlic, half of them sliced thinly, the other half minced fine. I put a lid on it and let it go for 20 or 30 minutes on low. Then I toss it into a large container with the Wendy's chile and I'm good for 6 days, 7 meals total. Each day I put a small amount of already cooked chicken or meat into a bowl and ladle some chile over it, then stir and top it with already made rice I have in a container in the fridge. I am proud of this meal and just had to share it. Thanks.
