Default Pasta al-mushy


I had just dumped the spaghetti into the boiling water.
Phone rang... I had to leave the house "right now" !
What to do ?

I turned off the stove, put the lid on the pot, and went out.

When I came home ( half hour later )
the pasta looked "cooked".....
So I drained, sauced, served.

I've never been a big fan of "al-dente"
But now I know what "al-mushy" is like. YUK !

Is there any way I could've saved this spaghetti ?
I'm thinking it woud've been bettter to just toss it,
and start over....
???

There is no saving pasta that is over cooked. Should have just started
over.

The question was how he *could've* saved it. 'Stead of just turning off the
heat and running off *could've* quickly drained the pasta and gave it a quick
toss with a bit of oil to keep it from sticking (leave the oiled pasta it in
the colander, in the sink)... then start the cooking again later... pretty much
how lots of restaurants do. Naturally if yer running off to an emergency, like
someone's bleeding to death, then well, screw it, pasta is cheap.

If it happens again quickly drain it, dry it (you can put it between paper
towels to dry it), and put it in plastic baggies or something air tight.
Stick it in the refrigerator. When you get home throw it in salted boiling
water and finish cooking it. You can even freeze it partially cooked and
finish cooking it later. This is basically the way restaraunts do pasta.

Yes, toss it and start over. Once it gets to that point, there's
nothing you can do with it; it will only get worse.

Yeah, but... that wasn't the question... the question was what COULD'VE been
done OTHERWISE to PREVENT the pasta from overcooking, something besides just
turning off the heat and walking out the door while the pasta soaked in hot
water for who knows how long. I suggested draining and oiling... but even if
one is in a super hurry, pouring a few cups of cold water into the pot to stop
the cooking may have saved the pasta from total disaster depending how far
along it was cooked at the time. And the way some folks pasta results no
matter they weren't disturbed, a disturbance may result in an improvement.
