Default Haven't met a potato patty I didn't like


Can't help myself, but I have a hard time throwing away little bits of
leftovers from dinner, so I've become pretty good at using them for
breakfast. It seems like every time I have some leftover potatoes
though, I have to make potato patties. They are so good, it's a rut I
don't want to get out of.

I do this quite often with leftover mashed potato, not only is it
delicious but better for me than bread (wheat intolerance).

Looks real good but I would go with frying in bacon grease (( lard)
the secret ingredient).

Very tasty looking. I don't have potatoes often, but when I do, I prefer
them crispy like that.

I like to use leftover mashed potato by lightly cooking some white fish and
mixing it in before frying as patties.

I used to have those as a child and still like them. I think sf made some
after I mentioned them once.

I saw your fried mashed potato with egg on top this morning in the
binary group. That looked very good. Love the potatoes fried that thin
and that browned.

That just shows that no matter what you say or how you think, deep in
your subconscious you *are* a good cook and you know what's right.
heheh A bit of green onion would work for me.

There is a fish paste sold in Hawaii that is perfect for this. I forgot
the name of the fish but it's very bone filled and the really only
useful way to eat it is to scrape the meat off the bones forming a fish
paste. It's sold packaged in the same type of packs that ground beef
are.

Yes! Hubby wanted more fish in his diet, and I dislike fish - so it
was a good compromise. Too bad he didn't like it. Poor little us eat
out more now. In fact we did last night. He had the sole, I had
tutto mare (shellfish and pasta) and we were both happy.

I never used to like fish much. It was not my mother's forte. My wife
used to cook fish once in a while, but living inland, the only fish we
had access too was frozen. Somewhere along the line I started ordering
fish in restaurants, mainly to learn about different preparations. I was
always in the habit of ordering things I could not cook myself.

There is a wide range of tastes and textures with fish, and if you try
enough of them you are bound to find something you like. FWIW, the one
that I came across that has become a regular in our house is grilled
salmon. We have it 2-3 times per month. When steelhead is available it
makes a nice chance. Swordfish and mackerel are nice meaty fish.

But... never mind. Fish is expensive enough. If more people liked it the
price would go up even more.

Although I am a FIRM believer in bacon grease for frying
my mother used to make potato cakes and fried them in
bacon grease. They were just to 'heavy' for me and I'd
usually end up with a queasy stomach.

I wonder how koko's recipe would be prepared but using
a cooking spray and baking them?

I never found that bacon grease lent much bacony goodness to foods fried in it. There's nothing wrong with it but keeping a pot of grease by the stove is kind of a bother and unsightly. I would have no problem with substituting vegetable oil for bacon grease in all cases. The most important part is to use oil and a lot of it!

Works for me! I'm eating Ducky Beans on stir fry cabbage which is
admittedly a bit abnormal. Hey, I dont care. Your dinner thought

My experience differs. I like bacon grease for frying eggs or sautéing
onions for lentil soup. Non-frying applications include putting a bit
on cooked green beans or using it as some of the fat in salad dressing.
Olive oil, bacon grease, balsamic vinegar makes a nice dressing for
salad with leftover turkey on it.

I disagree. The important thing is to use the right amount of oil for
