I didn't even look at the recipe, darn! Seems like a lot of "standard
recipes" have changed, and this is another one to add to the list.
When I first looked at King Ranch Chicken, the Rotel went on top.
Haven't looked at it since. Too bad, my bad.

Do whatever you do for the base, top it with cheese and put the Rotel
on top of that and it's not pink.

What I do is make the base with chopped roasted peppers (Hatch,
Anaheim, jalapeno, canned whatever) - doesn't matter. Top with cheese
(I do NOT use yellow cheese) and put salsa on top of that. It's the
absolute, last layer. When it bakes, the cheese & base bubble up and
covers the salsa, so it virtually disappears.

My way is pretty darned good and it's not pink (pink has never entered
the picture for me), but I haven't made it since hubby finally
admitted he was a type 2 diabetic and wanted to control it via what he
eats, so I don't make carb loaded meals like that anymore - so it has
been quite a while.

I wrote this before but my very first share here when I added this group
was about a chicken casserole I made that I enjoyed a lot but it was
shot down in flames! Early warning to have a thick skin to post here.
To be honest, I haven't made it since then. I've learned better ways
to make something similar. With this ng you have to sift through the
garbage to find the pearls. I've found many many pearls.

It calls for 12 corn tortillas (6 inch) - that's plenty of carbs. But
I make King Ranch Chicken in name only, I guess. Scratch recipe and
certainly not as many tortillas. I don't even use Rotel. I use salsa
fresca from the deli section.
