Default I scorched!

I think I jinxed myself after saying that I rarely scorch anything.

The day started out great with that VA issues we've had now being resolved.
Yay! But it was all downhill from there.

Managed to slice my ankle open on the shower door. For some reason I am
being super klutzy today and just nothing is working for me. I have been
tripping over things, falling for no apparently reason, dropping things...

Got out of the shower and put my top on inside out. I thought something
wasn't right but I was in a hurry. I didn't discover this until I got home.
And people must have noticed because I got numerous compliments from
strangers on my pants. I have on my leggings with the kittens and roses on
them.

Then I couldn't find my keys! Turns out they were exactly where I thought
they were but I had set a pair of scissors down on top of them. Only after
Angela inadvertently pointed to the scissors did I find them. That was
rather comical. I asked her for help and she just made a gesture which I
mistook for pointing to the scissors. She then looked baffled when I felt
relieved and thanked her profusely. Heh.

Got home and proceeded to make the not quite White Castle casserole. And
decided to make some oatmeal raspberry bars at the same time since it is so
much cooler today.

Got everything out and began cooking the meat and veg. Decided to add a
chopped zucchini. It's a wonder that I didn't cut myself but I escaped
injury there. I'd had to buy two of them in order to get the one that I
wanted for the meatloaf. So I figured I would add it to this. I also used
a real onion this time, a can of Rotel, chili powder and a little tomato
paste. I had drained the Rotel but the end result still had too much liquid
in it. So I cooked it down while doing other things around the kitchen.

Came in here to check the bake times and temps and do a few other things.
Then smelled something that I associated with an outdoor BBQ. Looked
outside like an idiot. We just got new, outdoorsy neighbors but there was
nobody there. Then it dawned on me! I ran to the kitchen and sure enough I
had failed to turn the burner off. I had gotten a phone call right as I was
about to do that. Grrr... So... Yes indeed, the mixture scorched.
Thankfully not badly enough that my pan was damaged or hard to clean out.

I carefully tried to remove only the non burned bits and added a can of
spicy Jalapeno refried beans to the top, over that layer. But what of my
dough? Something went weird with my Crescent roll dough. I have never had
this happen before but I also don't have a lot of experience with the stuff.

The dough in the first can was all stuck together. I couldn't unroll it at
all. Meanwhile, while I was futzing around with that, my other can
exploded! Yep! I had it standing upright and the top end just blew off and
landed on the stove. I just sort of stood there dumbfounded, turned it the
other way and the dough slid out into my hand. That one did unroll and I
put it on the bottom of the casserole. Then the meat/veg, then the beans
then I just sort of pinched off little bits of the mess of remaining dough
and stretched it out to patch over and pretty much cover the top. I don't
know why but it seemed like there wasn't as much dough as normal in either
can. Normally I have to sort of scrunch it up to get it to cover fit the
bottom of the dish and also the top.

So... What happened there? I got this from Amazon. There was blue ice in
there. Did it freeze? Did it somehow get too warm\? When I took it out of
the fridge, did I let it sit out for too long? It was sitting out while I
cooked the meat and veg. And by the time I got back, I had turned the oven
on but that was only on for perhaps a minute before I set about opening the
cans.

Then I almost did a screw up on the oatmeal bars! I had one jar of
raspberry fruit spread and one jar of medium salsa. Both the same brand and
both close to the same size so looked similar at a glance. I almost opened
the salsa to put on my oatmeal bars. Somehow I don't think that would be so
good! I only hope that my casserole is edible. I intend to cover my
serving with some salsa, black olives, cilantro and green onions.

Oh and the last fiasco... My grapefruit scented Method dish soap with the
pump top leaked all over the back of the counter behind the sink, into my
greenhouse window.

That's it. I'm done for the day. No more cooking. Don't even think I
should dare to make a sandwich for husband's lunch. He may just get cottage
cheese and a can of pears. That sounds safer.

Just had to say, OMG this dinner is good! I will for sure be making this
again! Zucchini is one of those things that I can take or leave, unless it
is what they serve at the Hibernia diner. The menu refers to it as "stewed"
and it is in a tomato sauce. The waitress tried to talk me out of ordering
it because it was an acquired taste but I did love it! Must have had a lot
of sugar or some such in it though because it shot my blood sugar through
the roof. And someone gave me a deceased person's recipe box that contained
something like 100 different recipes for stewed zucchini, none of which
tasted like what I got there. But I digress.

I can't taste the zucchini in here. It just blends in quite nicely. And
the overall taste is quite different than the original recipe. There is a
Mexican flare to it but it's not quite Mexican. It's just darned good!
This is for sure going to be my new favorite food!

I think I only did one klutzy thing today. But I haven't tried to cook
anything.
