Why do you feel the need to veer off into other things and tell me what to do? I don't run my house that way and I wouldn't. You're just plain nasty. A lot of people here are nasty. And rude. Very, very rude. I like to cook. I like to cook food that people will want to eat. I specifically asked if anyone had made this type of enchiladas. This is loosely the recipe that I used. http://allrecipes.com/Recipe/Cottage...en-Enchiladas/ I say loosely because I rarely ever follow a recipe to a tee. Obviously I didn't have boiled chicken. And I didn't use enough chicken even though I used much more than what I would say was the equivalent of 2 chicken breast halves. I also used two cans of enchilada sauce. I don't think one can of that size would have been enough for 12 enchiladas. Oh and I didn't use 12 tortillas either. I used 9. I ran out of chicken at that point. Had I made them as stated they would have taken very little chicken per roll. Since my chicken was already cooked, I put the onions in the pan with a little oil, then cooked them until soft. Added the chicken to heat through. Added the remains of a bottle of jalapeno Tabasco sauce, probably 2 T., some crushed red pepper, some chili powder and the chilies. I did have a little leftover of the cottage cheese mixture but I also didn't do that right. I was in a super hurry and only glanced at the recipe. I did not see that I should have mixed the shredded cheese in. And I couldn't find the cheese that was called for so I bought a mix called Mexican. Angela helped me to make them. We put the sauce on top, split between two smaller pans so I won't have a partially full pan in the fridge and I know that enchiladas are hard to transfer to another container... She then threw the shredded cheese on top and I put the remaining cottage cheese mixture on top. I actually made extra of that because I had intended to make 18 enchiladas. Oddly, I got half that. But it was all good. Husband ate them with no complaints. I served them with a side of rice that I accidentally purchased. It's a rice and black bean mix. I grabbed the wrong thing from the shelf. Oh and there was guacamole on top because he likes it. I am having a ground beef burrito with some of that rice. Angela got her own meal, not because I told her to. Because she didn't like my options and she said that she would. I did tell her to make sure to eat vegetables. I'm sure that wasn't a problem since we have plenty in the fridge. |

If I wanted to speak to the woman, I could figure out how to do that. I don't want to. And she doesn't want to eat enchiladas at home. Why? Who cares. I also don't cook weird crap. Spoiling your kid is only going to make her life very, very hard. You are doing her great harm or should I say you have done her great harm.
