Default Lady Alice apples

I accidently picked up a couple organic Lady Alice apples instead of
fujis. Wow. Not only crispy when still room temp, but also
surprisingly tangy and flavorful. My question: are LA apples good for
apple pie? Seems like they would hold up to baking.
