Default What's for Dinner? 2/10/2015

Tonight I'm making chuck roast. I decided I'll cook it on the stove top
rather than use the crock pot, just because. New potatoes and lima
beans to go with it. It's a nice comfort meal.

What's on your menu?

Leftover grilled skinless, boneless chicken breast on a bed of romaine lettuce,
dressed with balsamic vinaigrette. A slice of multigrain bread and a glass
of ice water. Followed by half an ounce of semisweet chocolate.

Last night was better. Sunday I observed that a pint of grape tomatoes
were getting a little overripe. I roasted them and set them in the fridge
because I had other plans that night. Monday, I sauteed a thinly sliced
clove of garlic in olive oil, shook in a bit of chile flakes (like the ones
at the pizza parlor), and then added the tomatoes. When they were heated
through, I added some sliced chicken. Delicious. The tomatoes were like
candy.

It's snowy and windy. Time for some comfort food: chicken and stuffing
hot dish, plus a green salad. Baked apples for dessert.

I'm having the last of the hamburger steak. Husband and daughter will have
something from the freezer or fridge. I'm not cooking. Am trying to use up
some stuff. I know there are mini tacos, taquitos and prepared salads.
Later tonight I'll make a pot of chili for tomorrow. I have to make it now
because I have to go to something at the school at dinner time.

I do occasionally make quesadillas. I should add those to my list of
things to make soon. The little Mexican market on St. Helena sells
oaxaca which is a very nice Mexican melting cheese. I think they also
sell asadero. The language barrier is occasionally a problem.

I made some stir fried veggies too. Shhh. Don't tell them! They won't eat
it if I call it stir fry. Used an onion, baby carrots, two red bell peppers
and some snow peas. I also made heated up a cheese pizza and some honey
battered chicken. So they get the stir fry and a few bites of assorted
things. And now I have some freezer space!

I'm going to make an effort to gain more freezer space so I can make a big
batch of meatloaf. I have also discovered some frozen food at Walmart that
we all like. It's just a half a piece of pita bread with meat/cheese in it.
I eat the ones with the little burger patties and Angela likes the chicken
and cheese. They also have a burger patty and cheese but I will just buy
the plain ones. Would be easy enough to add cheese if somebody wanted that.
I buy the Roma tomatoes, then add slices of those, onion and lettuce to
mine. Of course this wouldn't be an every day meal but it is something I
can heat up in a matter of minutes and it is good food with no crap in it.

When Angela was a toddler, I made her a quesadilla several times a week for
lunch. She had it with baby carrots, black olives and perhaps some cut up
fruit. She didn't eat much then so unless I was cooking for someone else
too, I just used a small tortilla and folded it in half. I dry fry mine. I
am always shocked at how greasy they are in many restaurants. Blech.

The maligner is Julie for constantly inserting her child into her
ridiculous posts... Julie is a child abuser. I wish Julie would
disappear from RFC, she contributes little to nothing on topic... all
Julie does is flood this Newsgroup with hate and discontent. Remind
Julie about boundaries and lines.

Thank you for posting this. I was totally shocked (and it would take a
lot for me to be shocked by Sheldon) at his post. Insults between adult
posters is part of life on Usenet, but that kind of post, aimed at
someone's child, is just plain despicable.
