As soon as they are 'out of their nests' they should immediately be hauled away and out of the sun. A lot of it happens at the store and at home. Just plain old light exposure will do it. That's why the plastic bags the potatoes are in have a solid printed side and an unprinted side. The printed side should always be up in the store. Get your potatoes from further into the pile. At home be sure to cover them from light. Janet US |
