Default Making and storing breadcrumbs...

I lay out fresh bread slices on racks and loosely lie a sheet of wax paper over the top...let them air dry until they
are dry throughout. Crumb them (I use a plastic bag and a rolling pin, or my food processor). I store them
In a Ziplock in the cupboard or in a storage container. I don't season until I use them. I don't freeze them
because I don't see a need for it. They last just fine in the cupboard. But they MUST be totally dry.

That's a good idea Nancy, I just realised that I have a dehydrator I
could use for this.
