Pretty much. Dunno about posh stuff like low sodium stuff but that's yer
modern ideas and nowt wrong with that)

Thanks, I'll probably look at both and do something in between... no
lamb kidney though. They aren't in the grocery store where I shop and
I'd be hard pressed to recall seeing them recently in a stand alone
butcher. I think they would even be a special order from the butcher
that caters to "the trade". No problem though because hubby has to
stay away from organ meat.

I can't find lamb kidneys where I live, either. The woman who is half
owner at the meat market is from the UK and said nope, she can't get them.

But do enjoy the hotpot!

Thanks to my wife teaching me how to braise, I learned how to make
excellent beef stew. I applied the same technique to stewing lamb. Since
I started by browning the meat I realize it is not Irish stew, and since
I use lamb it is not beef stew, but it sure is good.

I'd skip the bacon, garlic and chicken broth. LHP is simple food and
doesn't requiore other flavours. I just use lamb, carrots, onions,
potatoes and seasoning.

The lamb really should be neck of lamb; you need the bones in to
enrich the gravy, which is an essential factor in hotpot.
