Then I make cream of celery soup using only the freshest celery. Whole cream is a must for the soups! Then I hand make the noodles. Everything is now on hand for the tuna I expect to catch in the river that runs through our inland city. So far, no luck. Or, I fall back on my wife's recipe that requires none of that. If one spends more than forty-five minutes of prep making tuna casserole, they miss the point. leo |

Truth told, I thought I remembered that my mother made it when I was a kid - but in truth, she didn't. I think I've read too many stories here about others and their childhood memories that I transposed to my childhood. I have to get those warm and fuzzy thoughts out of my head. She wasn't like that. Not saying she was an awful person, but she knew what she liked/didn't like and she didn't want to subject us to her dislikes... because she hated them. -- Good Food. Good Friends. Good Memories. |

The main problem with most cream of ___ soups is the crap they put in them. Tons of sodium, HFCS and soy protein isolate in some cases. You can get organic soups but they may not be condensed and condensed is usually what people want in a casserole. But... You can easily make a white sauce and it does make a fine tuna or other casserole. Yes, it will be rather weak on the taste scale unless you add some onions to it, which I do. But I think that's the appeal of such casseroles. |
