Default Today's baking

Peppa Pig Jumping in Muddy Puddles cupcakes (from a packet my four
year old grand-daughter found at the supermarket), lemon cake and
apple and cinnamon muffins.

Dinner tonight is Pad Thai, or for those who do want that, toasted
bacon and egg sandwiches made to order with their choice of sauce and
additions.

Oh, I can visualize it. Bacon fried mostly crisp, egg fried in a little
bacon fat. Served on buttered toasted bread. Not exactly healthy but
delicious on rare occasions. I'd leave off any sauce.

My dad used to love fried egg sandwiches (sans bacon) with HP sauce.
Yes, we have been able to buy that in the US for decades.

I guess it was the toasted that confused me. For me, a toasted cheese
sandwich is a piece of bread put under the broiler with cheese and
maybe bacon on it. An egg sandwich is a fried egg put on a couple of
slices of bread. I couldn't see how you could get the egg to sit
still on the bread under the broiler ;o)

Oh, I read that differently. I was thinking fried egg sandwich with
crispy bacon on toasted bread. Not toasted as in under the broiler and
no cheese. Sorry for the confusion!

Just as Jill replied, cooked bacon and egg between toasted bread. Fuel
for teenagers and a sometimes indulgence for me.

I like cooking one pot dishes. I awoke early so figured I had lots of
time to prep veggies, I was intending to do a roast in the oven but I
like this better. Only thing is I wasn't supposed to be on my feet so
much. Thursday I was at the vascular surgeon to tend to a few tiny
varicose veins on my calf. I've had them for as long as I can
remember, since I was a teenager... just a spot the size of a half
dollar, barely noticeable... I never paid it any attention and many
doctors had a look but never said there was anything to be done. Then
two weeks ago on a Saturday evening I was sitting at my PC and felt
something wet on the floor, I looked down and thought it was a murder
scene, blood in a big puddle and spraying from my leg like a geyser.
At first I just stared unbelievingly. Then I realized it's my blood,
I grabbed a few paper towels and applied pressure. Twenty minutes
passed and it didn't stop so I dialed 911 and waited for the
ambulance. By the time they arrived (20 minutes) the bleeding just
about stopped. They applied a pressure bandage and hauled me to the
ER. They didn't think it was any big deal, they see this all the
time. At the ER they applied some kind of liquid skin, bandaged me up
again and told me to see my family doctor. Two days later it sprung a
leak again but this time I was prepared and was able to stop it by
applying pressure. So I got an appointment with the vascular group
and they treated it with a hypodermic, basted it inside with some sort
of fluid and told me to leave the bandage on and stay off my feet for
three days, then I could remove the bandage and shower and then put
the bandage back for three more days, and they'll see me the following
week to check it. I never realized that Ace bandages are super itchy
so I decided not to put it back. And here I sit, but at least I
prepared a nice dinner. Ophelia, I wish you were here to help me eat
this pot roast and to nurse me.
