You turn the heat down when it's almost to a boil and by the time it's boiling the element will be cooling off down to a simmer. I hate gas. I have gas now and still turn the burner off too soon or turn it on too early. The ovens never bake as evenly either, and unless you get a higher end gas stove the broiler is under the oven and you don't get that storage space either. Kathy |
