Default dinner... using leftovers


I had braised pork shoulder/butt in the freezer waiting for me to pay
attention to it, so I turned it into carnitas. I had roasted corn in
the freezer (yes, I roasted it and cut it off the cob) and combined it
with canned black beans (well rinsed) etc (+). I added other stuff
that you can google and adjust to personal taste.

I also discovered last weekend that people are okay with using falafel
as a dipper in tzatziki sauce. I had pre-cut (by me) pita on the side
which was used - but I think it was used as a dipper, like the fafael.

I got some fresh tortillas. Flour, not corn. They are rather large. Will
make a bean taco for dinner. Daughter had eggs, salad and a stuffed baked
potato. There is another potato in the fridge, plus pizza, fried chicken
and a sugar free French Toast casserole plus plenty of fresh veggies.
Husband can choose from those.

Tomorrow, daughter and I will have hummus pitas. She likes cucumber in
hers. I like tomato and onion. I will also have Kalamatta olives. We'll
also have carrot sticks. Husband will have a ham steak, potato salad and
coleslaw. Supposed to have record high heat so I am not cooking.
