Do you have a grill pan?
If you do, here's what I made for dinner tonight. It was inspired by http://thepioneerwoman.com/cooking/2...with-eggplant/ but not slavishly followed. I grilled eggplant, onions and other additions (seasoned) to the recipe including chicken and cauliflower. I would have used fire roasted tomatoes, but I didn't have any on hand - so I used regular (organic) canned, diced tomatoes and changed the amount to one can, not two. I ended up adding some TJ's marinara sauce that was lurking in my refrigerator because I didn't think I had enough sauce, so I added maybe 4oz worth marinara. I also added ¼ to ½ tsp dried oregano to it. I also added a couple tablespoons of chopped fresh basil just before serving and topped it with freshly grated parmesan to serve. I've mentioned the pasta shape I used recently: cellentaini, -- Food is an important part of a balanced diet. |
