Have you made Vinho d'Alhos (Portuguese Marinated Roast)? I've been
looking at recipes and it seems delicious!

I've made it but the restaurant down the street makes it great. My
suggestion is that you make one of those recipes and after cooking the
pork, fry it in a skillet with some oil. Squish it down a little and
flip it over when it's brown and crispy on one side and brown the other
side. Splash it with a good hit of vinegar right before you take it out.
I love that stuff! I always have that for breakfast.

So, it's Portuguese style carnitas?

That sounds about right. I stuck a pork butt in the oven this morning
and it's been in that 200 degree oven all day. I'll have it on tortillas
with some beans. Boy, that's gonna be tasty!

I slow cooked a pork butt last night. Those guys at the pork butt
factory really inject a lot of water in those butts because I get a lot
of pan juices when I cook one of them. I shredded the pork and mixed
together the juices, some ketchup, Pico Pica hot sauce, and shoyu, and
poured it over the pork. Boy was it great! I only shredded half the butt
so we'll pan fry the rest till it's crispy tonight. Hopefully, it'll be
as good. :-)
