Default Spicy Eggs Country Style

Well, I started out to make a country style Eggs Benedict. I was doing
just fine until it came to make the Hollandaise sauce, and drat, not
enough butter. As I was digging through the fridge hoping to find a
stray cube of butter somewhere I spied the homemade salsa a co-worker
gave me. Plan B. Instead of a country Benedict, Spicy Eggs Country
Style turned out to be an excellent alternative.

Here's what I did and photos if you are interested.
